Easiest Dinner Ever

How has another week already passed?  Can you believe tomorrow is Friday?  Don't get me wrong, I'm very happy about that, but yikes life needs to slow down.  We are so busy, busy and always on the go.  That being said, dinner usually suffers {resulting in us picking up Chipotle}.  B and I are trying to make an effort to eat better and cook more.  This dinner has become our go-to for quick, easy and delicious.  The best part?  You really don't even need a recipe.  Enjoy!

Baked Cheddar Chicken with Sprouts and Potatoes
 
Ingredients:
  • Chicken breasts
  • Butter {melted}
  • Italian breadcrumbs
  • Shredded cheddar cheese
  • Shaved Brussels sprouts
  • Fingerling potatoes
  • Olive oil
  • Salt
  • Pepper

Directions:
Heat oven to 350 degrees.  Rinse and pat dry chicken breasts.  Place butter in one dish and combine breadcrumbs and cheese into another.  Dip each breast into butter and then dip into breadcrumb and cheese mixture.  Place each breast on foil lined baking dish.  Top each one with any remaining breadcrumb and cheese mixture.  Bake 25 to 30 minutes or until golden brown.  To make the sides, simply toss sprouts and potatoes in olive oil, salt and pepper and place on foil lined baking dish.  Bake at 425 degrees for 20 to 30 minutes.  Enjoy!
