Pinspired: Eat Healthy for Less

I am a sucker for new recipes.  I love going through cooking magazines.  My problem is I want to try them all.  In the same week.  I am horrible at meal planning.  I buy way too many different ingredients for way too many different recipes resulting in a way too high grocery bill {even at Trader Joes!}.  I have been working on that.  My new goal is to meal plan per week and try and use the same ingredients in various dishes.

Thanks to Pinterest, I found this great post on eating healthy for less.  First attempt was...

 
 

Ingredients
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
8-10 skinless chicken thighs, bone in
1/4 cup chicken broth
1/4 cup white wine
2 garlic cloves, sliced into thin rounds
3-4 sprigs fresh thyme
1/2 cup pitted olives such as Kalamata
1 lemon, sliced into thin rounds
1 cup whole wheat couscous
1/2 pound broccoli

Parmesan cheese to taste
1 teaspoon lemon zest


Directions
1. Preheat the oven to 450 degrees. Heat olive oil in a large ovenproof skillet over medium-high heat. Sprinkle chicken with salt and pepper; add to pan, meaty side down. Cook for 5 minutes. Turn and cook for 2 minutes more.
2. Pour out any excess fat. Return pan to burner; stir in broth and wine, scraping up any brown bits. Scatter garlic, thyme, and olives on chicken.



Lay one lemon round on each piece of chicken.

3. Place skillet in oven. Roast chicken for 17 to 20 minutes, or until juices run clear. 
4. Prepare couscous according to package directions and steam broccoli.  Serve chicken over couscous; place steamed broccoli on the side and sprinkle with parmesan and lemon zest.

 
I obviously did not taste the chicken, but B was pleased.  Not his favorite dish he said {thought the chicken could be more flavorful} but the sauce was amazing over the coucous.  Try and let me know what you think!

Scenes from the weekend...

This is about all that went down this weekend for our family.


A 12 hour work event for me plus the stomach bug hitting our house meant this was not our best weekend.  Thankful for B who is an amazing dad and hung with the little man all day Saturday and helped out when even I got hit with the bug Sunday.  Here's hoping we got it out of our system since we are heading to Big D this week.  Oh and don't forget to tune in tomorrow for the Red Rover Kids Giveaway winner.

Do you love it??


I sure do!  I am so thankful for the oh so talented and darling Aubrey Kinch of The Kinch Life Designs.  I mean could she be more talented??  She is so patient and such a delight to work with.  She took all my crazy ideas {I tend to be all over the place!} and created something so beautiful and fun. I hope you enjoy this new look as much as I do!

Pinspired: Lucky Charm Treats

I have to admit holidays are a lot more fun with a little one.  In honor of St. Patrick's Day I wanted to make little treats for G's friends at school.  Knowing time and effort are not on my side these days, I went to Pinterest to get pinspired.  I loved the simplicity of this and am all about a free printable and no baking!


I think my pinspiration turned out pretty darn cute!

 
 Here's hoping G's friends enjoy the sugar rush and their parents don't hate me. :)

Bring on the warm weather!

I am SO ready for warmer weather. Yes, I know everyone is, but I really am. Why? Because I have no clothes. Really. I wear the same couple of outfits every week to work, and it is starting to drive me crazy {I'm sure my co-workers are tired of the same boring stuff too!}. Sure all my maternity clothes from last year are Winter staples, but they are too big. However my real clothes are a little too snug. So in an effort to will the warmer weather here, I have been pursuing some Spring duds. I am loving the blues, greens and especially mint!

For the love of biscuits

Much like his mama my son is a "carbatarian." His latest addiction, biscuits. 
 
 
The kid has a problem.  One day each week at school they get biscuits. Last week when I dropped him off on biscuit day, he couldn't get to the table fast enough. This is also the same day I received this note in his box.
 
 
Luckily he settled into his seat and stuffed the biscuit in his mouth without injury. I chuckled to myself as I walked out and ran into my friend whose daughter is in G's class. I told her to watch out, it's biscuit day and G is into it! Twenty minutes later I get this text from my friend...
 
 
This kid just cracks me up. Between chasing girls and stealing biscuits, it's a miracle he's still in school. Gotta love him!

Pinspired: Hummus Melts

I am all about trying new recipes and love to cook.  However these days there never seems to be enough time {or energy}.  Thanks to Pinterest I love finding quick meal ideas.  This one is a new favorite in our house.


So easy and lots of ways to change it up {like adding chicken} to please my non-vegetarian husband.  Plus G can eat them too!  Definitely a win-win in my book.  Oh and be sure and serve with my new addiction.  If you close your eyes and think hard enough, you'll swear you're eating nacho cheese Doritos!

 
Hummus Melts
 
Ingredients:
  • Whole wheat flatwich
  • Chipotle hummus
  • Spinach
  • Gruyere and Swiss blend shredded cheese

Directions:
Toast flatwich and then slather with hummus.  Saute spinach in olive oil for a few minutes until slightly wilted.  Add cooked spinach to flatwich and sprinkle with cheese.  Put under the broiler for a few minutes until cheese starts to bubble.  Enjoy!
