Signing off for Lent...

I love this blog. It is so much to me. It's a creative outlet, a community and accountability. But it's also a distraction. Something that becomes a priority before what really should be my priority. After some prayer, I've decided to "give up" this blog for Lent. Sure I could give up coffee and wine which have become my two biggest vices, but you know what, I've done that for nine months. Twice. It's doable. Giving up this blog and Instagram {this is going to be hard!} will be more than just eliminating something from my diet. It's taking away what tends to consume my time and thoughts so that I may refocus on what matters. Time in the word. Time in prayer. And time with my family. I will miss this blog and the community that surrounds it but look forward to catching up after Easter!

Arugula Quinoa Salad

This is my new favorite salad. So easy! Great for lunch and filling enough for dinner. Enjoy!

Arugula Quinoa Salad
Ingredients:

2 cups cooked quinoa
Olive oil
1/4 cup pine nuts
3 cloves minced garlic
1/4 cup goat cheese
1/4 cup Parmesan cheese
Arugula
Pomegranate seeds

Directions:

Place enough olive oil to coat in a skillet and add garlic.
 Cook on medium heat for a minute or two.
Add pine nuts and cook for another minute or two.
Add cooked quinoa and toss around enough to coat.
Add cheeses and stir a minute or two until they start to melt.
Remove from heat.
Place arugula in bowls and add quinoa mixture and pomegranate seeds to each.
Stir to combine and serve.

Scenes from the weekend...

Here's to a new week friends. We spent our weekend blowing through way too much tissue. George, Jude and I were all down for the count. Oh and to top it off, B was out of town. Luckily he came home early, and let me say we have never been so excited to have him home. So much for packing and productivity. Never got out of our pjs except to escape for a quick lunch out and to stock up for icemaggedon today. I'm just sitting here staring at our boxes, packing paper and tape wondering if there's some way this house will pack itself. Wishful thinking...
