Bon appétit!

So these days planning, shopping and cooking for elaborate meals just does not fit in the schedule.  I am all about quick and easy recipes that definitely include yummy, fresh ingredients.  B and I both have been trying to eat healthy and one of our favorite meals is the Tuscan kale salad at Tavern.  Well I think I have managed to recreate it.

You just need a few simple ingredients.

  • 3 tablespoons extra virgin olive oil
  • juice of one large lemon
  • 1 teaspoon white wine vinegar
  • 1 small clove garlic, minced
  • sea salt, black pepper to taste
  • 1 bunch of kale
  • 1/4 cup toasted slivered almonds
  • 1/4 teaspoon crushed red pepper or to taste
  • Lots of grated Parmesan cheese (to taste) 
  • Sea salt, black pepper


Instructions:

To make the salad dressing, simply mix garlic, olive oil, lemon juice, vinegar and salt and pepper.

Rinse kale, roughly chop and dry with salad spinner or paper towels.

Chop finely using a mezzaluna or chef’s knife.



Toss with salad dressing, cheese, toasted almonds and crushed red pepper.

Season to taste with salt and pepper.



And voila!  Dinner is served.  This is so addicting!  We had it for dinner three nights last week.

And for dessert, my other new obsession, thanks to my friend Ashley.


Mix one part light sour cream to one part non-fat Greek yogurt and add brown sugar to taste.  Then mix in fresh berries.  I added yummy lemon wafers from Trader Joe's for a little crunch.

Look who's four months old!

Happy four month birthday, George!





George is growing and changing so much!  Especially growing!  We had to pack up many of his clothes this month that he has already outgrown. J 


So, what is the little man loving this month?  His nanny!  I went back to work and am so blessed with a wonderful nanny who George adores.  We are doing a nanny share, so he also loves spending time with his girlfriend Lily (they are two days apart and love each other!).  I am once again so thankful for my sweet baby that he adjusted to his new schedule and has transitioned so well.  He’s also learning to love (not quite there yet) rice cereal.  At his four month check-up we were given the green light for solid foods.  Check out our first attempt…







So he’s definitely wearing more than he’s eating!  Here’s looking forward to all that comes with month five…

Hoppy Easter!

We headed back to Big D for Easter and once again this little man proved to be quite the trooper on the flight there and back.  Flirting with the flight attendants, of course. 

The weekend included dinner with friends at MiCo, a baby shower, an Easter egg hunt, Papaw's birthday party and of course a visit from the Easter bunny.  It was a non-stop, whirlwind trip, but then again, it always is! :) Looking forward to the next time we are home!

So yes, my child is actually now five months old (cannot believe it!) but I've had these monthly posts just sitting here and am finally catching up.  Bear with me people! :)

 

Month 3 was lots of fun and filled with lots of firsts!

The little man had his first bottle, took his first airplane ride and laughed for the first time.  There is truly no greater sound than that of my sweet baby’s laugh.  George also met many, many family and friends for the first time.  The highlight of month three for me was definitely the incredible sleeping skills of my little guy.  I swear the 12 days we were in Texas he slept 12 hours each night.  I was having to wake him up each morning!  My little man continues to grow and proves to be the best laid back, go with the flow baby.  I love him so much and look forward to many more firsts!
